The beautiful Italian countryside.

This week my university took my peers and I to my director’s countryside home. It was an amazing day full of great food and good friends. We spent the day cooking and eating and of course drinking wine. It was a wonderful atmosphere; a great way for all of us to get better acquainted and to get to know our educators. It was one of the best days I’ve had here. It was so refreshing to get to know each other over amazing food made with fresh, local ingredients. I am truly in love with the connection Italians have with there food. They buy there foods fresh from local markets instead of stocking up on food from who-knows-where that was shipped to the store who-knows-when. Also, a difference I have notice is that here fresh, local foods such as fruits and vegetables are significantly cheaper than buying them at the store. I think we have it a little backwards in the States. My passion for food and cooking grows a little stronger everyday and I’m excited to start experimenting with recipes I received from the day we spent in the country.

Tired my hand in frying eggplant; makeshift breadcrumbs and no real seasoning. Not perfection but it will do for the first dinner that isn’t spaghetti.
